Ingredients (4 people)

6 large ripe tomatoes, fleshy
2 green peppers
1 red pepper
1 cucumber
1 heart large onion, 1 clove garlic (optional))
2 slices day-old bread without the crust
Salt
Extra virgin olive oil Cortijo Linares

Preparation

Soak the bread slices. Place in a bowl with water to cover, adding a little salt and oil. Save it.

Peel and chop tomatoes, peppers, cucumber, onion and garlic. The seeds were removed from the peppers. Mix all ingredients.

In electric mixer, place the mixture of ingredients (in a batch or batches), add a little water and mash until you get a cream. Add the bread with water, vinegar and beat again until everything is getting minced and emulsified.

Add cold water and mix well. Check the salt and vinegar.
