Ingredients (4 people)

4 ripe tomatoes
1 package chopped chives
1/2 cup chopped black olives
300 grams of grated cheddar cheese
12 chopped basil leaves
100 grams of grated Parmesan cheese
50 grams of toasted bread crumbs
Basil leaves for garnish
Extra virgin olive oil Cortijo Linares
Salt and pepper

Preparation

Wash the tomatoes and chop them in half. Extract the pulp with a spoon. Chop the chives and sudarlos in a pan with olive oil. Chop the olives into small pieces. Join the cooked onions with olives and tomato pulp (shredded). Add the grated cheddar cheese, chopped basil, salt and pepper. Fill the tomatoes with this mixture and place on a baking tray. Mix the Parmesan with the bread crumbs and chopped parsley and sprinkle over tomatoes. Bake for 20 minutes at 350 º C. and then fry a few minutes to grill.
